Here at Touching Earth Farm we enjoy cooking & eating fresh vegetables as much as we enjoy growing them! Take a look at some of our favorites, or better yet, give one of them a try. We invite you to share your favorite recipes and we challenge you to give a not-so-favorable vegetable a second chance! Several CSA members and farmer's market attendees have changed their minds about kale by preparing this simple recipe below:
KALE CHIPS
1 bunch of kale (stems removed & cut into 2" pieces) 3 tbsp extra-virgin olive oil few pinches of kosher salt 2 tbsp apple cider vinegar
Preheat oven to 350. Whisk together vinegar, oil & salt. Toss with kale leaves. Place in a single layer on cookie sheet. (A baking sheet lined with parchment paper makes for easy cleanup.) Bake 10-15 minutes, flipping halfway through until crispy. Do not overcook or brown too much or the chips will taste bitter.
